Reducing waste with incredible taste

Our mission is to reduce fruit waste by using fruit from our orchards that would otherwise be composted as it is too ripe to sell to market and use this fruit to  create a line up of top shelf fruit spirits that directly supports farmers, and families in our Niagara community. 

Every year 10% (approx. 30,500 tonnes) of the tender fruit grown in Niagara region is wasted as it is either too ripe for the trip to market, or has fallen in the harvesting process. This fruit is packed full of sugars that are easily broken down by fermentation into a fruit wine that we then distill into an array of brandy, vodka, gin, and eau de vie (unaged fruit brandy).

We base our delicious spirits around the 7 tender fruits grown in Niagara region:

  • Peaches
  • Pears
  • Apricots
  • Nectarines
  • Yellow Plums
  • Blue Plums
  • Cherries

Approximately 1/3rd of all food available for human consumption is lost or wasted.

Less food waste = less greenhouse gas emissions. Reducing food waste is one of the most important things we can do to reverse global warming.

SiN is made from Niagara for Niagara in Niagara, always local produce- straight from our orchards.

Our sustainable distillation process allows us to give the fruit back to the fields.

Our stillage tank holds over 5000 litres of nutrient rich waste water from our distillation process.

This stillage is distributed throughout our orchards as a form of green manure, allowing the naturally low nutrient sandy soils to get the nutrients they need to thrive and extend their life cycle.
