Our mission is to reduce fruit waste by using fruit from our orchards that would otherwise be discarded as it is too ripe to sell to market and use this fruit to create a line of top shelf fruit spirits that directly support farmers, and families in our Niagara community.
Tender fruit are packed full of sugars that are easily broken down by fermentation into a fruit wine that we then distill into an array of brandy, vodka, gin, and eau de vie (unaged fruit brandy).
